Target's Mozzarella Frittata

Since Wage is out of the kitchen this week, Target wanted to revive this blog by posting his recipe here. This is a way yummy breakfast and there are so many variations you can make. Please enjoy!


Mozzarella Frittata





Ingredients:
6 eggs, beaten
1/4 cup milk
3/4 cup shredded mozzarella
1/2 teaspoon black pepper
Pinch salt
1/2 cup chopped green onion
3 chopped basil leaves
2 tbsp extra virgin olive oil
1/2 cup diced heirloom tomatoes
1 small diced shallot


Directions:
Preheat oven to broil setting.

In medium size bowl, using a wisk, beat together eggs, milk, green onion, basil, mozzarella, pepper, and salt. Heat olive oil in a 12-inch non-stick, oven safe saute pan over medium high heat. Add tomatoes and diced shallot to pan and saute for 2 to 3 minutes. Pour egg mixture into pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set around the edges. To ensure that your frittata will slide out of the pan after baking, lightly separate the edges from the pan with your spatula and drizzle a small amount of olive oil down the side of the frittata. Sprinkle with a little more cheese before placing in the oven.

Place pan into oven and broil for 4 to 6 minutes, until lightly browned and fluffy. Slide out of pan onto serving plate and cut into 6 equal slices. Serve immediately. Nom Nom Nom!

check the spelling on quite a few of your posts. Many of
